Tasting notes
Vinification
The origin
Rocolo is made from a blend of estate-grown indigenous grapes: Corvina, Corvinone, Rondinella, Molinara, and Oseleta.
In the glass, it shows a deep, luminous ruby-red color.
On the nose, it opens with intense, well-defined aromas of ripe cherry and wild berries, followed by fresh and spicy notes that blend with subtle balsamic hints, adding depth and breadth to the bouquet.
On the palate, it is full-bodied and elegant, supported by vibrant yet well-integrated tannins that lead to a savory, persistent, and harmonious finish.
A structured yet balanced wine, perfect for pairing with rich dishes and shared moments.
Recommended pairings:
- Pasta with meat sauces
- Game
- Boiled meats
- Grilled red meats
- Cured meats and medium to long-aged cheeses
Vinification begins with manual selection of the grapes, which are naturally dried for about thirty days, following the traditional Amarone method.
This is followed by gentle pressing and careful vinification aimed at preserving the fruit’s aromas.
After a brief cold maceration, the wine undergoes a slow fermentation at controlled temperature, with daily skin management to ensure balanced extraction.
Aging continues in 30-hectoliter French oak barrels for at least three years, followed by an additional year in bottle before release.
The name Rocolo is deeply rooted in the history and memories of the land. It refers to an old hunting post—a small elevated tower offering an open view of the vineyards and surrounding landscape.
A place of observation, now a symbol of the deep connection to the land.
The rose on the label holds profound meaning: it is a tribute to Maria Rosa, the grandmother from whom our story began. But it is more than that.
The shape of our Cru, when seen from above, resembles a rose, making this flower the emblem that unites land and memory, place and affection.
The three roses illustrated represent the three generations behind this project: first Maria Rosa, then Daniela, and finally Veronica and Alice, who today passionately carry forward a legacy in constant evolution.
