Tasting notes
Vinification
The origin
Zèfiro is crafted from a blend of estate-grown indigenous grapes: Corvina, Corvinone, Rondinella, and Molinara.
In the glass, it shows a bright, light ruby-red color that invites tasting.
On the nose, it stands out with clean, fragrant aromas of fresh fruit—cherry, raspberry, and wild berries—elegantly enhanced by subtle spicy notes.
On the palate, it is crisp, fresh, and savory, with a vibrant and genuine sip, perfectly balanced.
A versatile wine, ideal for any occasion.
Recommended pairings:
- Aperitif
- Delicate dishes such as soups
- Risottos
- White meats
- Fish
- Soft cheeses
Vinification begins with careful selection and manual harvesting of the grapes, followed by gentle pressing and low-temperature fermentation in stainless steel.
After a brief cold maceration, fermentation takes place at a controlled temperature to preserve aromas and freshness.
The wine is aged in stainless steel, with a small portion maturing for one year in French oak barrels, followed by additional bottle aging for at least six months.
The name Zèfiro evokes the gentle summer breeze that blows across Monte La Parte—a soft wind that caresses the vineyards and refreshes the air, much like this wine, created to express the freshness and elegance of the land.
The rose symbol on the label carries deep and personal meaning: it is a tribute to Maria Rosa, the grandmother who, with passion and dedication, gave life to this family story.
Moreover, the shape of our Cru, when viewed from above, resembles a rose, embodying the bond between emotional roots and the land where it all began.
The three roses symbolize the three generations that have made this journey possible: the grandmother, the mother Daniela, and finally Veronica and Alice, who today preserve and carry forward a legacy that is ever, living and growing.
