Corvina, Corvinone, Rondinella, Oseleta, Molinara.
Only estate-grown grapes, hand-harvested and carefully selected.

Harvest
Manual, during the last ten days of September.
A strict selection identifies the best bunches, which are laid out in plateaux for a short drying period in the fruttaio, lasting around 20 days.

Soil
Calcareous, tuffaceous, poor and rich in stones: ideal conditions for producing grapes with great concentration and character.

Vinification
After drying, the grapes are fermented in temperature-controlled stainless steel tanks (18–20 °C), to preserve aromatic precision and freshness.

Aging
The wine matures in French oak barrels of various sizes (5 to 30 hl) for at least 36 months, developing depth and complexity.
This is followed by a minimum of 6 months of bottle aging, ensuring balance and harmony.

Pairings
A wine of structure and personality, perfect with hearty dishes from the Veronese culinary tradition:
pasta with donkey or game meat ragù, slow-cooked meats, stews, and the classic bollito with pearà.
Also excellent with aged cheeses—especially those matured with herbs—for an intense, bold pairing.
