Manual harvest at the beginning of September to preserve freshness and acidity.

Soil
Calcareous, tuffaceous, poor and rich in stones — ideal conditions for balanced vine growth and natural aromatic concentration.

Vinification
After a gentle pressing, the must undergoes cold maceration on the skins to enhance the extraction of primary varietal aromas.
It is then separated from the skins and fermented at a controlled temperature (16°C), preserving its delicate rosé hue.
Sparkling is achieved through the long Charmat method, allowing for a fine and persistent perlage.
An extended sur lie aging completes the maturation process, giving the wine depth, elegance, and harmony before bottling.

Pairings
Perfect as an aperitif. It pairs beautifully with refined dishes such as seafood cruditès, white meats, and freshwater fish.
