Harvest
Entirely manual, during the first days of October.
Only the ripest and healthiest bunches are handpicked and placed in 4–5 kg plateaux.
The grapes then undergo over 4 months of natural drying in the fruttaio, losing up to 50% of their weight, resulting in remarkable concentration of sugars, aromas, and structure.

Soil
The Monte La Parte Cru is characterized by a high presence of exposed calcareous rock, which imparts elegance, minerality, and longevity to the wine.

Vinification
Takes place in small stainless steel vats, with daily pump-overs and manual punch-downs, enhancing every nuance brought by the long drying period and the complexity of the blend.
A slow, respectful process designed to fully express the identity of the wine.

Aging
The wine matures in 5-hl French oak barrels for at least 5 years, without ever being filtered.
This is followed by a minimum of 12 months in bottle, allowing the wine to reach a fully evolved and harmonious sensory profile.
