Exclusively sourced from the Monte La Parte Cru, the beating heart of our estate.
Harvest
Manual, between late September and early October.
Only the finest bunches are meticulously selected and placed in plateaux to undergo a natural drying process in the fruttaio lasting over 100 days.
During this time, the grapes lose up to 35% of their weight, concentrating sugars, aromas, and structure.
Soil
The Monte La Parte Cru is marked by a strong presence of emerging calcareous rock, imparting pronounced minerality, depth, and exceptional aging potential to the wine.
Vinification
After drying, the must ferments in temperature-controlled stainless steel (18 °C) with a 30-day maceration to ensure maximum extraction of color, tannins, and aromas.
Aging
The wine matures in 30-hl French oak barrels for a minimum of 5 years, developing great complexity and harmony.
This is followed by at least 12 months of bottle aging, completing the wine’s sensory evolution.
Pairings
A wine of great importance, with powerful structure and a contemplative character.
Perfect with rich first courses featuring meat sauces, red meats, game, fine cured meats, and aged cheeses such as Grana Padano DOP aged 24 months or more.
Also ideal on its own, as a meditation wine, for moments of quiet pleasure and reflection.
